Can anyone suggest good soup recipes for my 4 year old. A very fussy eater. I am tired of making tomato soups.
You can use tomato base broth (tomato soup broth watered down).
Add onion, garlic (if he likes the flavor), lady finger (bhindi), zuchchini or any gourd and rice. Let them boil well. If he likes milk flavor you can add a little bit of milk. Good way to get all those vegetables in.
Then there is clear onion soup, chicken soup but these will not get as much nourishment is as the Gumbo.
You can also do the chinese egg (noodle) soup.
Consists of soup broth, break an egg and fork it in the broth as it gets heated, add some carrots, cabbage (shredded), tofu (optional), rice/noodles (optional). Take it off the stove and season with chilli vinegar and soya sauce.
To skip soup broth you can do 50/50 of water & milk. In case of soup broth you may want to check if it has Monosodium Glutamate (MSG). For your child you definitely need to try to keep it to the minimum, if not non-existent.
you can give him Chicken Soup - VERY useful during cold, coughs, chest congestions - my doc recommends it always.
Pressure cook 250 gms chicken (curry cut - with bones) along with 2 cups of water along with some chopped onion, ginger, garlic, few peppercorns and a handful of coriander leaves for 2-3 whistles.
Serve it the following ways
1) strain and give the child the clear soup - loads of nutrition & taste. A sick child will gulp it down easily and it will benefit the child immensly.
2) add some cooked rice in a bowl and pour some of the soup & chicken pieces in it and serve it as a wholesome meal, few pieces of onion, ginger garlic and coriander add to texture and taste.
I have been giving this to my child since she was 10 month old.
